If you use too much it can dry the dough out very quickly, and the dough will become very hard to work with. Be sure to let the lasagna rest for 30 minutes before cutting into it. Bring a large pot of salted water to a boilover high. Fill a large bowl with ice water place clean kitchen towels on work surface. Hold each pasta sheet at 1 end with both hands, and slowly lower into boiling water. Repeat with 4 pasta sheets cook, stirring gently, until al dente, about 30 seconds. If using dried pasta, cook according to package directions for al dente. Remove from water using a spider or kitchen tongs, and submerge in ice water 30 seconds. Remove from ice water, and lay flat on kitchen towels. Do not stack. Smooth out pasta using your hands. Repeat with remaining pasta sheets. Grease inside of a deep x 9-inch baking dish with butter. Top with 2 pasta sheets, covering bottom of dish completely, pushing any overlap up sides. Top with 2 pasta sheets. Top evenly with half of prosciutto. Top with remaining prosciutto. Cover lasagna with aluminum foil. Bake on a rimmed baking sheet on middle rack in preheated oven 55 minutes. Remove foil bake until top is golden brown, about 35 minutes. Remove from oven let rest at least 30 minutes before serving. I made this last night for New Years Eve celebration and it was stupendous. I made a few changes because I only have a standard sized lasagna pan not deep dish that couldnt possibly accommodate 24 layers. And I used a different recipe for the fresh pasta. Mine had 5 layers of pasta, 2 layers of mushroom ragu I used the full recipe but with only a little over 1 oz dried porcini , 6 layers of bechamel the recipe made more than 8 cups, so I had a lot left over , about 12 oz fontina and 4 oz parmesan, and about 8 oz prosciutto cotto, layered approximately in the order specified. Then he did several Zoom interviews with the producers. Never once did they let on it was a contest. But that isnt what Barrymore and her private chef, Pilar Valdes, wanted for the segment. They were looking for how to make a simple meal. He was instructed to bring the cooked short ribs, to which he added fresh vegetables, to the show. He thought hed prepare the gouda grits on set. Valdes finished his dish. Barrymore and Valdes then tried the dish with Barrymore gushing over the autumnal quality and Valdes noting the tender meat.
